🗼 Auberge Resorts Collection to manage Moncayo, a new resort with exclusive Villas and Private Residences in a 445-hectare community on East Coast of Porto Rico, set to open in 2027. Juniper Capital and Capital United lead the project with investors José E. Feliciano and Kwanza Jones. Nestled between El Yunque National Forest and Puerto del Rey harbor, Moncayo offers 68 suites, 15 seafront villas, luxury amenities, and activities like meditation, jungle hikes, diving, and sport fishing. Designed by Studio Paolo Ferrari, the resort integrates natural materials and bright interiors.

🏨 AccorInvest, with 700 hotels under the Accor brand, has undergone a significant transformation over four years, led by CEO Gilles Clavié. The changes aimed to improve economic resilience by focusing on owning and operating hotels, narrowing their European portfolio, and specializing in the economic and mid-range segments. These segments have historically shown strong resilience and a quick recovery post-crisis. A rebranding with a new name and visual identity is also underway.

🏕️ Nature et Résidence Loisirs, a leader in outdoor hotel industry in France, created in 2020 and led by Luis Do Souto and Jean Philippe Olivier, is expanding. The group operates 7 campings with 3 to 5 stars, mainly on the Atlantic coast, and has 1,300 pitches. They are strengthening their equity with a first capital opening to fund future acquisitions and accelerate growth. The company has grown through external acquisitions and significant organic growth, underpinned by excellent locations and an experienced management team.

🏖️ Constance Group's resorts, Lemuria on Praslin Island and Ephelia in Mahé, Seychelles, offer a daily high-end sports and physical activities program. Constance Lemuria, with its 18-hole championship golf course—the only one in Seychelles—also caters to mountain biking and trail enthusiasts. Constance Ephelia, nestled between two untouched beaches on the main island of Mahé, spans a 120-hectare preserved site, perfect for activities like diving, windsurfing, kayaking, and hiking to Sauzier waterfall.

🏨 Les Hôtels Baverez annoncent que l'activité en 2024 sera impactée par des travaux de rénovation, avec un chiffre d'affaires inférieur à 2023. La rénovation de l’hôtel Raphael commence le 2 décembre 2024, entraînant sa fermeture dès le 10 novembre 2024. Deux emprunts de 10 M€ chacun financent la moitié des travaux, l'autre moitié étant autofinancée. Les emprunts sont garantis par un nantissement sur le fonds de commerce de l’hôtel Raphael, avec un décaissement initial de 4 M€.

Managed by Provent Hotels, which has a successful partnership with BWH Hotels Central Europe since 2021, the hotel aims to attract individual travelers and groups. The Dresden establishment, led by Anja Grimm since 2023, offers 131 rooms across five categories, breakfast restaurant, bar, and garage. Michael Lachmann, Provent Hotels' General Manager, foresees significant potential for the hotel in the individual and group travel market.

🍴 Lucrèce Lacchio, Cheffe at Le Berceau des Sens in Lausanne, crafted a festive foie gras recipe for Christmas. Ingredients include 4 escalopes of foie gras (~60g each), 6 Pink Lady apples, 1 Granny Smith apple, 50g Piemont hazelnuts, 50g pistachios, and a garnish of dill, fleur de sel, and pepper. Cooking involves 25 minutes for apple compote, separately roasting nuts, then blending with diced apple to create a mendiant. Foie gras is seared for 2 minutes per side and garnished with mendiant mixture.
