🏡 Overlooking Vence, the former Templar fortress, now a 5-star establishment in the Oetker Collection, offers views to the Mediterranean. The Rossini bar, led by Naples-native head barman Emanuele De Rosa for three years, transforms from serving amber tea with pastries under 18th-century tapestries in the morning to rosé from Côtes-de-Provence and Sauvignon Blanc from Loire accompanied by tapas from Michelin-starred chef Jean-Luc Lefrançois during the day. The venue comes to life before sunset, with music and a selection of cocktails, like the strawberry-pureé Rossini and the Côte d'Azur with vodka, fresh lemon, and grapefruit juice.
